This soup is how I first got my guys to eat soup! Hearty and delicious and it has KALE in it! Win win!
Ingredients:
- 4 slices thick bacon chopped
- 1 lb Italian Sausage (I use all different kinds sweet, spicy, turkey sausage)
- 3 cloves garlic – peeled and minced
- 1 medium onion finely diced
- 6 -8 cups chicken or beef broth/stock
- 2 cups chopped red potatoes
- 3 cups kale – chopped small
- 1 cup whipping cream or half ‘n half
- 2 tsp. dried oregano
- Salt and black pepper to taste
- Parmesan cheese (grated) to serve
Instructions:
– In a large pot or Dutch oven over medium-high heat, add chopped bacon and sauté until browned (5-7 mins). Remove to a paper-towel lined plate and spoon out excess oil, leaving about 1 T oil in the pot.
– Add Italian sausage, breaking it up with your spatula and sauté until just cooked through and lightly browned.
– Add finely diced onion and sauté 5 min or until soft and golden then add minced garlic & oregano and sauté 1 min.
– Add stock and potatoes, and bring to boil, then reduce heat to medium. Cook until potatoes are easily pierced with a fork (about 15 min.)
– When potatoes nearly done, add chopped kale. Stir in 1 cup cream, season to taste with salt and black pepper then remove from heat.
Garnish with bacon and grated parmesan.
