My Mom has made this recipe since I was a child. It is the reason I like zucchini! I think it’s the perfect accompaniment to a summer supper. It’s also a side and a veggie all in one! Always a plus in my book.
Ingredients:
- 2 med/large zucchinis, thinly sliced
- 1 med onion, chopped
- 1 – 2 cups shredded cheddar (your preference – we like lots of cheese!)
- 4 eggs, beaten
Directions:
- Saute onions and zucchini in pan with olive oil on stove top on medium for about 6 – 8 minutes. Zucchini should be al dente.
- Add in eggs by pouring them on top of zucchinis/onions and cook on low with a cover until eggs are set (not runny)
- Add cheese to top and broil for 4 – 5 minutes until cheese is melty & golden
- Slice and serve like a pie
