Ingredients:
- 1 T olive oil
- 2 T tomato paste
- 2 T chili powder
- 1 tsp. cumin
- 1 green pepper, chopped
- 1 yellow pepper, chopped
- 1/2 onion, chopped
- 1 T fresh cilantro
- 1 tsp. s & p
- 1 28-oz. can diced fire-roasted tomatoes
- 2 cups low-sodium chicken broth
- 1 can Navy beans, drained & rinsed
- 1 cup crushed tortilla chips
Toppings: sour cream, shredded cheddar cheese, tortilla chips
Directions:
1- Heat oil in large pot over medium heat, stir in onion, peppers and saute about 5 minutes
2 – Stir in tomato paste, chili powder, cumin, s&p to taste – cook 1 minute, set aside
3 – Brown ground turkey in a skillet and then add to pot and stir into the onion/peppers
4 – Add tomatoes, chicken broth, beans, cilantro, and crushed tortilla chips, bring to a simmer on low heat
5 – Cook for at least 15 minutes to bring out flavors
