Background: I had the most delicious shrimp from a restaurant in Atlanta over the weekend so I tried to re-create it on my own. The result was delicious!
Ingredients:
- 1 package frozen Red Shrimp from Trader Joes
- 2 T butter
- 1 T olive oil
- 1/2 tsp. kosher salt
- 1/2 tsp. black pepper
- 1/2 tsp. chili powder
- dash of red pepper flakes
Sauce:
- 1/3 cup honey
- 2 T soy sauce (I use reduced sodium)
- 4 cloves minced garlic
- 1 tsp. chili garlic sauce
- 1 tsp. siracha
- 1 whole lime (juiced)
Directions:
- Heat oil and butter in skillet on med high heat. Season shrimp and add to pan in single layer. Cook approx. 2 min. per side until golden brown on outside and pink on the inside. Transfer onto plate.
- Meanwhile, whisk the sauce ingredients together and then add to hot skillet and stir about a minute until starts to thicken and then add shrimp back in and stir to coat.
Serving Suggestions:
I love making coconut turmeric rice, but recently found Publix has it premade and just needs to be microwaved for 5 minutes. This is a great shortcut when you need it!
I also sauté black beans (drained and rinsed) and add cotija cheese and fresh cilantro. I also steamed some fresh green beans (al dente) which goes perfectly with this dish.
What a fast and delicious meal!
