This soup tastes like “summer” to me – Enjoy!

Ingredients:

1/2 c. red onion, chopped

2 cloves, chopped

1 cucumber, peeled and chopped

1 green pepper, chopped

2-3 celery stalks, chopped

2-3 tomatoes, chopped

1/2 c. cillantro, washed & chopped finely

4 cups V8 Tomato Juice (low sodium)

2 T Vinegar (Rice and/or White Balsamic)

2 T lemon juice

s & p 1/2 tsp. each (or to taste)

1 avocado, chopped

Directions:

1 – Chop vegetables and add to bowl (no avocado)

2 – Add tomato juice, vinegar, lemon juice, s & p, and cillantro and toss

3 – Add about half of the chunky soup in the food processor and puree…mix back into chunky soup to create a perfect consistency

4 – Store in refrigerator and stir in chopped avocado before serving
