Ingredients:

  • 1 lb thin steak
  • 2 T olive oil
  • s & p to taste
  • 1 tsp. chili powder
  • 1 tsp. cumin
  • 1 onion, cliced
  • 4 cloves garlic
  • 3 bell peppers
  • 4 large tortillas
  • 2 cups mexican blend cheese
  • guacamole
  • sour cream
  • salsa

Directions:

1 – season steak wth olive oil, s & p, chili powder and cumin.

2 – Cook on high heat for roughly 3 minutes.

3 – Remove steak from heat and sauté onion, garlic, and peppers.

4 – Slice steak into strips.

5- Mix the steak into the pepper mix and set aside

6 – In clean pan, add olive oil and lay the tortilla on the pan, add cheese, fajita mixture, more cheese and then top tortilla.

7- Flip until it’s golden on both sides and cut into quarters with a pizza cutter.  Serve with guacamole, sour cream and salsa.
