This is my new obsession! Super easy to make & delicious. I just kind of threw this together, but it was so good that we will be rotating it into our dinner menu frequently.
Ingredients:
- 4 boneless chicken breasts (organic)
- 1 – 32 oz. carton of chicken stock
- 1 jar Salsa Verde
- 1 small onion, finely diced
- 1/2 lime
- 1 can Navy beans (drained & rinsed)
- 1 small can green chilis
- 1 reg. size can of fire roasted diced tomatoes
- 1 tsp. cumin
- 2 tsp. chili powder
- s & p
Directions:
Dump all ingredients in Slow Cooker and set to Low to cook at least 6 hours. The chicken will literally fall apart. I usually just use a fork to shred it in the pot. The flavor will blow you away – enjoy!

- Fresh avocado, diced
- cilantro (you can also add this right to the slow cooker while cooking if your whole family is a fan)
