This is my new obsession! Super easy to make & delicious. I just kind of threw this together, but it was so good that we will be rotating it into our dinner menu frequently.

Ingredients:

  • 4 boneless chicken breasts (organic)
  • 1 – 32 oz. carton of chicken stock
  • 1 jar Salsa Verde
  • 1 small onion, finely diced
  • 1/2 lime
  • 1 can Navy beans (drained & rinsed)
  • 1 small can green chilis
  • 1 reg. size can of fire roasted diced tomatoes
  • 1 tsp. cumin
  • 2 tsp. chili powder
  • s & p

Directions:

Dump all ingredients in Slow Cooker and set to Low to cook at least 6 hours. The chicken will literally fall apart. I usually just use a fork to shred it in the pot. The flavor will blow you away – enjoy!

  • Sour Cream
  • Crusted Tortilla Chips
  • Fresh avocado, diced
  • cilantro (you can also add this right to the slow cooker while cooking if your whole family is a fan)
