Ingredients:

  • 4 boneless chicken breasts
  • 1 bottle of beer (or chicken stock if you prefer)
  • 1 jar of Salsa Verde
  • 1 onion, diced
  • 4 cloves garlic, minced
  • 1 jalapeno, diced
  • 2 tsp. cumin
  • 1 tsp. chili powder
  • 1 tsp. black pepper
  • 1-1/2 tsp. salt
  • 2 fresh limes
  • freshly chopped cilantro

Directions:

  • Add all except lime and cilantro: chicken, beer, salsa, onion, garlic, jalapeno, cumin, black pepper, chili powder, and salt to a large slow cooker and gently toss to combine.
  • Cook for 6-8 hours on low until chicken easily shreds with a fork.
  • Preheat your oven to broiler setting and grease one large baking sheet with cooking spray and then transfer chicken onto baking sheet, spreading in an even layer and then scoop one ladle full of juices onto the chicken.  Broil for about 5 – 6 minutes until edges begin to brown. Remove sheet from oven and add more juices and repeat.
  • Toss with remaining juices and juice of one fresh lime and fresh chopped cilantro.

Serve immediately in tacos, on salad, burritos, or just eat with a fork – it’s so good!!
