Ingredients:

3 C. chopped raw shrimp

1/2 C. fresh lime juice (2 limes)

1/2 tsp. salt and pepper

1/2 C. red onion, finely chopped

1 green pepper, finely chopped

1 C. fresh cilantro, washed & chopped

2 – 3 vine ripe tomaotes, finely chopped

1 – 2  jalapenos, seeded, chopped

2  avocados, chopped & set aside

Directions:

  1. Toss shrimp and lime juice, cover bowl and refrigerate for 30 mins.
  2. Mix the rest of the ingredients (except the avocado) to the shrimp mixture.
  3. Before serving, mix the avocado into the shrimp.

Serve with Tortilla Chips – Enjoy!

optional:  Splash of hot sauce to kick it up
