Ingredients:
3 C. chopped raw shrimp
1/2 C. fresh lime juice (2 limes)
1/2 tsp. salt and pepper
1/2 C. red onion, finely chopped
1 green pepper, finely chopped
1 C. fresh cilantro, washed & chopped
2 – 3 vine ripe tomaotes, finely chopped
1 – 2 jalapenos, seeded, chopped
2 avocados, chopped & set aside
Directions:
- Toss shrimp and lime juice, cover bowl and refrigerate for 30 mins.
- Mix the rest of the ingredients (except the avocado) to the shrimp mixture.
- Before serving, mix the avocado into the shrimp.
Serve with Tortilla Chips – Enjoy!
optional: Splash of hot sauce to kick it up
