Make Sauce:

  • 1/2 cup coarse-grained mustard
  • 6 garlic cloves-minced
  • 4 T balsamic vinegar
  • 4 T extra virgin olive oil
  • 2 T chopped fresh rosemary

Marinate the pork tenderloin in the sauce for at least 3 hours (but I like to do it in the morning and let it sit all day) and refrigerate.

Bake in pre-heated 400 degree oven and cook 25 minutes. Will be light pink in the inside. (145 degree internal temperature). Let rest for 5 minutes before slicing and serving. I like paring this pork with roasted potatoes and a nice salad. Enjoy!
