For the Mojo Marinade:
- 1 cup orange juice
- 1/2 cup lime juice
- 1/4 cup olive oil
- 8 cloves garlic
- 1 T dried oregano
- 1 tsp. cumin
- 1 tsp. salt
Chicken:
- 2 lbs boneless chicken breasts
- 1 tsp. salt
- 1 tsp. pepper
- 2 T olive oil
Tacos:
- 2 large avocados, diced
- 1 large tomato, diced
- 1/2 red onion, finely diced
- 3 T fresh cilantro, diced
- 1/2 lime, juiced
- Corn tortillas, street size
Instructions:
1 – Whisk together all the marinade ingredients – set aside.
2 – Season the chicken breasts with salt and pepper on both sides, sauté in olive oil 5-8 minutes on each side. Once browned all over, remove and add to baking dish.
3 – Pour in marinade and bake for 40 min. at 375 degrees.
4 – Remove chicken and shred and then pour the sauce over the chicken and toss.
5 – Gently stir together chopped avocado, tomato, red onion, lime juice, and fresh cilantro. Season with s & p.
6 – Toast or warm tortilla shells.
7 – Fill tacos with mojo chicken and chunky avocado salsa – Enjoy!
