Ingredients:
- 2 cups corn (use right off the cob or use canned corn)
- 1/4 cup sour cream (light)
- 1/4 cup mayo (light)
- 4 oz. cream cheese (light)
- 1 can green chilies or jalapenos
- 1/2 cup. cotija cheese
- 1 tsp. cumin
- 1 tsp. chili powder
- s & p to taste
- 2 cloves garlic, minced
- Fresh cilantro
- 2 T butter
Instructions:
1 – In skillet, add butter, garlic and corn and saute for 8 min.
2 – Add the green chilies or jalapenos, spices, sour cream, cream cheese, and mayo and mix well.
3 – Stir in half the cotija cheese, place mixture in oven (in oven safe dish) and sprinkle the rest of the cheese on top. Broil for just 3 min. on high.
4 – Remove from oven and sprinkle fresh cilantro on top. Enjoy with tortilla chips & a margarita!
