Ingredients:

  • 2 cups corn (use right off the cob or use canned corn)
  • 1/4 cup sour cream (light)
  • 1/4 cup mayo (light)
  • 4 oz. cream cheese (light)
  • 1 can green chilies or jalapenos
  • 1/2 cup. cotija cheese
  • 1 tsp. cumin
  • 1 tsp. chili powder
  • s & p to taste
  • 2 cloves garlic, minced
  • Fresh cilantro
  • 2 T butter

Instructions:

1 – In skillet, add butter, garlic and corn and saute for 8 min.

2 – Add the green chilies or jalapenos, spices, sour cream, cream cheese, and mayo and mix well.

3 – Stir in half the cotija cheese, place mixture in oven (in oven safe dish) and sprinkle the rest of the cheese on top. Broil for just 3 min. on high.

4 – Remove from oven and sprinkle fresh cilantro on top. Enjoy with tortilla chips & a margarita!
