Ingredients:

  • 3-1/3 cups GF Flour (I like King Arthur GF flour – it’s measure for measure same as regular flour)*
  • 1-1/2 cups sugar
  • 2 T pumpkin pie spice
  • 2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 2 cups pure pumpkin
  • 1/2 cup butter, melted
  • 1/2 cup all natural apple sauce
  • 4 eggs
  • 1 cup dark chocolate chips
  • 1 cup butterscotch chips

Directions:

  1. Mix together dry ingredients and set aside.
  2. In separate bowl, whisk together pumpkin, butter, applesauce, sugar and eggs.
  3. Fold dry ingredients into pumpkin mixture. Add chocolate and butterscotch chips. Pour into muffin tins.
  4. Bake at 350 degrees for 20-24 min.

 

*I have made these GF and regular (even swap with regular flour) and they are delicious both ways.
