Ingredients:
- 3-1/3 cups GF Flour (I like King Arthur GF flour – it’s measure for measure same as regular flour)*
- 1-1/2 cups sugar
- 2 T pumpkin pie spice
- 2 tsp baking soda
- 1/2 tsp baking powder
- 1/4 tsp salt
- 2 cups pure pumpkin
- 1/2 cup butter, melted
- 1/2 cup all natural apple sauce
- 4 eggs
- 1 cup dark chocolate chips
- 1 cup butterscotch chips
Directions:
- Mix together dry ingredients and set aside.
- In separate bowl, whisk together pumpkin, butter, applesauce, sugar and eggs.
- Fold dry ingredients into pumpkin mixture. Add chocolate and butterscotch chips. Pour into muffin tins.
- Bake at 350 degrees for 20-24 min.
*I have made these GF and regular (even swap with regular flour) and they are delicious both ways.
