Ingredients:

  • 1 Rotisserie Style Chicken, chopped or shredded
  • 1 8 oz. block of softened cream cheese
  • 1 4oz. can of Green Chilis
  • 1 8 oz. can of Mild Enchilada Sauce
  • 2 cups Shredded Mexican Cheese Combo
  • 2 cups cooked rice
  • 1 tsp. cumin
  • 1 tsp. spiced paprika
  • s & p to taste
  • 2 T fresh cilantro

Directions:

1 – Mix softened cream cheese with green chilis, chicken, spices and 1 c. shredded cheese

2. Layer cooked rice on bottom of casserole dish and then top with above chicken mixture and then pour on enchilada sauce & sprinkle remaining cheese on top.

3. Bake 30 min. at 350 degrees.  Top with fresh cilantro before serving.
