Ingredients:
- 1 Rotisserie Style Chicken, chopped or shredded
- 1 8 oz. block of softened cream cheese
- 1 4oz. can of Green Chilis
- 1 8 oz. can of Mild Enchilada Sauce
- 2 cups Shredded Mexican Cheese Combo
- 2 cups cooked rice
- 1 tsp. cumin
- 1 tsp. spiced paprika
- s & p to taste
- 2 T fresh cilantro
Directions:
1 – Mix softened cream cheese with green chilis, chicken, spices and 1 c. shredded cheese
2. Layer cooked rice on bottom of casserole dish and then top with above chicken mixture and then pour on enchilada sauce & sprinkle remaining cheese on top.
3. Bake 30 min. at 350 degrees. Top with fresh cilantro before serving.
