Ingredients:

  • 1 lb lean ground beef
  • 1-1/2 cup chunky salsa
  • 1 – 10 oz. can red enchilada sauce
  • 8 tortillas (any kind you prefer – for my GF friends, Mission makes a great one easy to roll, etc.)
  • 1 bag shredded Mexican Cheese

Instructions: 

1 – Preheat oven to 350 degrees

2 – In large skillet, brown the ground beef and drain any excess fat. Add salt & pepper. Stir in the salsa and cook until heated through. Remove from heat.

3 – Pour a thin layer of enchilada sauce on bottom of baking dish.

4 – Add the meat mixture to each tortilla with a sprinkle of the cheese on top (adjust your cheese to preference). Tightly roll each tortilla seam side down and lay them in pan. Add remaining enchilada sauce over top of enchiladas & sprinkle remaining cheese on top.

5 – Cover with aluminum foil and bake 30 minutes.

Optional Toppings: sliced avocado, sour cream and fresh cilantro
