It’s a mouthful to say, but it’s delicious and easy to make which is my favorite combo!

Ingredients:
  • 2 T olive oil
  • 2 cloves garlic, minced
  • 1/2 onion, chopped
  • 1/2 cup shallots, chopped
  • 2 lbs ground beef
  • 1 tsp dried parsley
  • 1 tsp. oregano
  • 1 tsp salt
  • 1 tsp pepper
  • 16 oz. (I use a bit more) Rao’s marinara sauce
  • 3 cups frozen riced cauliflower
  • 1 large carton low sodium beef stock
  • 8 cups sliced cabbage (I use the mix of cabbage and carrots from Trader Joes)
Instructions:
  1. Heat oil and garlic on medium heat, add onions and shallots and cook until soft
  2. Add ground beef and cook just until no longer pink (I brown all of this in the saute mode in my crock pot and then turn to slow cook, but if your slow cooker does not have a saute mode, just do this part in the stove and then now dump it all into your crock pot), drain fat
  3. Add seasonings, marinara & riced cauliflower to beef mixture, stir together
  4. Add beef broth and cabbage, stir everything together
  5. Cook on high for 2-3 hours or low for about 6 hours.  You can also do it on the stove in a large soup pot and simmer on low for about an hour until cabbage is tender.
