This recipe checks all the boxes: it’s easy, fast prep, new way to make chicken fun, and healthy.

Ingredients:

  • 3-4 chicken breasts
  • 8 oz. fat-free (or low-fat) cream cheese
  • 1/2 cup fresh pesto (my pesto recipe to follow)
  • 1 cup shredded mozzerella
  • 1 cup grape or cherry tomatoes, halved
  • fresh basil, to taste

Directions:

  1. Preheat oven to 375 degrees
  2. Mix softened cream cheese & pesto together in bowl until well combined
  3. Lay chicken breasts fat into a greased baking dish and then spread the cream cheese pesto mixture on top
  4. Sprinkle 1 cup of mozzarella cheese, then top with tomatoes
  5. Bake uncovered in oven for 35- 45 minutes (depending thickness of chicken breasts)
  6. Garnish with fresh basil – serve with angel hair pasta (we love the edamame pasta)
