This recipe checks all the boxes: it’s easy, fast prep, new way to make chicken fun, and healthy.
Ingredients:
- 3-4 chicken breasts
- 8 oz. fat-free (or low-fat) cream cheese
- 1/2 cup fresh pesto (my pesto recipe to follow)
- 1 cup shredded mozzerella
- 1 cup grape or cherry tomatoes, halved
- fresh basil, to taste
Directions:
- Preheat oven to 375 degrees
- Mix softened cream cheese & pesto together in bowl until well combined
- Lay chicken breasts fat into a greased baking dish and then spread the cream cheese pesto mixture on top
- Sprinkle 1 cup of mozzarella cheese, then top with tomatoes
- Bake uncovered in oven for 35- 45 minutes (depending thickness of chicken breasts)
- Garnish with fresh basil – serve with angel hair pasta (we love the edamame pasta)
