Cranberry Muffins – recipe by my friend’s mom, MaryAnne Winfield
Mix together:
2 Cups flour
¾ Cups sugar
1-1/4 teaspoons baking powder
½ teaspoon baking soda
½ teaspoon salt
Add:
1 egg
1 Cup cranberries, cut up
½ Cup walnuts, chopped
1 Orange — Juice, rind (chopped)and pulp
2 Tablespoons melted shortening
Add water ‘til slightly sticky if too dry.
Bake @ 350 for 18-20 min.
