Ingredients:

  • 1 Box White Cake mix
  • 8 oz. sour cream
  • 1/4 cup vegetable oil
  • 3 eggs
  • 8 oz. cream of coconut (Lopez or Coco Real brand)
  • 1 T coconut extract

Directions:

Mix ingredients in electric mixer until well blended and smooth. Bake according to box cake mix (2 9″ round pans).

Frosting:

  • 8 oz. cream cheese (1 block)
  • 2 T milk
  • 2 cups powdered sugar
  • 1 tsp. vanilla extract
  • 1 tsp. coconut extract
  • 1 bag fresh coconut

Mix with electric blender until smooth. Frost & sprinkle coconut on each layer. Keep refrigerated.

 

 

 

I made a double layer cake. If you want more layers, just double the recipe.
