Ingredients:
- 1 Box White Cake mix
- 8 oz. sour cream
- 1/4 cup vegetable oil
- 3 eggs
- 8 oz. cream of coconut (Lopez or Coco Real brand)
- 1 T coconut extract
Directions:
Mix ingredients in electric mixer until well blended and smooth. Bake according to box cake mix (2 9″ round pans).
Frosting:
- 8 oz. cream cheese (1 block)
- 2 T milk
- 2 cups powdered sugar
- 1 tsp. vanilla extract
- 1 tsp. coconut extract
- 1 bag fresh coconut
Mix with electric blender until smooth. Frost & sprinkle coconut on each layer. Keep refrigerated.
I made a double layer cake. If you want more layers, just double the recipe.
