I have made these or a variation of these for a long time, but sometimes they’d turn out crumbly or dry and most of them do not have protein powder, so i played around and got what we think is the perfect blend!
My son loves these and has them during the day for snacks during his “at home” remote learning. I make a new batch every few days and store them in an air tight container in the refrigerator to keep them super fresh and not dried out.
Ingredients:
- 1-1/2 cups oatmeal (regular, not quick)
- 2/3 cup smooth peanut butter
- 2 T honey (raw, unfiltered)
- 2 scoops protein powder (I use chocolate)
- 1/2 cup flax seed
- 1/2 cup chocolate chips
- splash of almond milk
Directions:
Mix all ingredients in a large bowl until smooth and blended (add chocolate chips last). Roll by hand into bite size balls and store in refrigerator.
