I kind of threw this together one night and it was so good that I needed to write it down!
Ingredients:
- 3 T olive oil
- 1 onion
- 3 cloves garlic, minced
- dash of red pepper flakes
- 1- 28 oz. can of whole tomatoes (or crushed)
- Box of giant pasta shells
- 1lb + of ground turkey
- 1 small tub of ricotta
- 4 oz. goat cheese
- 1 cup shredded Parmesan Romano cheese
- 1 cup shredded mozzarella, and some fresh mozzarella, sliced
- 1 egg
- 1/3 cup fresh basil chopped

Directions:
- In saucepan, warm olive oil and add onion and sauté. Stir in garlic and red pepper flakes, 2 tsp. salt and 1 tsp. pepper and cook for 2 min. Add the tomatoes, and stir to combine. Simmer about 20 minutes.
- Cook ground turkey and season with s and p. transfer to a bowl and cool slightly. Add the ricotta, the goat cheese, Parmesan-Romano, half of the shredded mozzarella, the egg and basil, and about 1/3 of the tomato sauce to combine (save the rest of the sauce for the top).
- Stuff shells with your turkey mixture and top with tomato sauce, shredded mozzarella, fresh mozzarella.
- Bake 375 for 30 min.
