Ingredients:
- 2 lbs ground turkey
- 1cup shredded mozzerella
- 1/2 cup grated parmesan
- 2 eggs
- 2 tsp. onion powder
- 2 tsp. minced garlic
- 1 T Dijon mustard
- 1 tsp. Italian seasoning
- 1/2 tsp. black pepper
- 1/2 tsp. crushed red chili pepper flakes
- 2 T fresh basil, finely chopped
- 2 – 3 cups marinara sauce (I love making my own, but if I don’t have time, I use RAO’s Marinara (1 jar)
- 1 cup shredded Italian blend cheese (or just use more mozzarella)
- Fresh Basil for topping
Directions:
- Preheat oven to 400 degrees
- In large bowl, combine ground turkey (I use 1 lb 99% fat free and 1 lb 93% fat free), mozzarella, Parmesan, eggs, mustard, and seasonings/spices. Mix well.
- Using a cookie scoop, form meatballs and arrange in the casserole dish. I use a large Dutch Oven.
- Bake meatballs for 20 minutes. Top with the Marinara sauce and shredded cheese and bake for an additional 10 minutes until cheese is fully melted.
- Serve over sauteed cabbage or zucchini noodles.
