Ingredients:

  • 2 lbs ground turkey
  • 1cup shredded mozzerella
  • 1/2 cup grated parmesan
  • 2 eggs
  • 2 tsp. onion powder
  • 2 tsp. minced garlic
  • 1 T Dijon mustard
  • 1 tsp. Italian seasoning
  • 1/2 tsp. black pepper
  • 1/2 tsp. crushed red chili pepper flakes
  • 2 T fresh basil, finely chopped
  • 2 – 3 cups marinara sauce (I love making my own, but if I don’t have time, I use RAO’s Marinara (1 jar)
  • 1 cup shredded Italian blend cheese (or just use more mozzarella)
  • Fresh Basil for topping

Directions:

  1. Preheat oven to 400 degrees
  2. In large bowl, combine ground turkey (I use 1 lb 99% fat free and 1 lb 93% fat free), mozzarella, Parmesan, eggs, mustard, and seasonings/spices. Mix well.
  3. Using a cookie scoop, form meatballs and arrange in the casserole dish. I use a large Dutch Oven.
  4. Bake meatballs for 20 minutes. Top with the Marinara sauce and shredded cheese and bake for an additional 10 minutes until cheese is fully melted.
  5. Serve over sauteed cabbage or zucchini noodles.
