I’m serious when I say this is one of the favorite things I’ve made lately and perfect for any low carb diet. It’s creamy with a hint of a kick and oh so satisfying. I was searching (dissecting) different recipes as I usually do and I kind put this together because it sounded yummy to me.

Ingredients:

  • 3 cups frozen riced cauliflower, thawed
  • 8 oz. freshly grated sharp Cheddar cheese
  • 4 oz. cream cheese
  • 1/3 cup cream
  • 1 tsp. paprika
  • 1/4 tsp. Cayenne pepper
  • s & pepper to taste
  • optional: 3-4 strips of crispy bacon

Directions:

  1. Melt cream cheese and cream until combined over med-low heat (just takes a few minutes), stir constantly (you can add a splash of milk or extra cream if it seems to thick)
  2. Mix in Cheddar cheese and spices and stir until melted and combined
  3. Bake 20 min. at 350 degrees. Add bacon on top before serving if desired.
