I’m serious when I say this is one of the favorite things I’ve made lately and perfect for any low carb diet. It’s creamy with a hint of a kick and oh so satisfying. I was searching (dissecting) different recipes as I usually do and I kind put this together because it sounded yummy to me.

Ingredients:
- 3 cups frozen riced cauliflower, thawed
- 8 oz. freshly grated sharp Cheddar cheese
- 4 oz. cream cheese
- 1/3 cup cream
- 1 tsp. paprika
- 1/4 tsp. Cayenne pepper
- s & pepper to taste
- optional: 3-4 strips of crispy bacon
Directions:
- Melt cream cheese and cream until combined over med-low heat (just takes a few minutes), stir constantly (you can add a splash of milk or extra cream if it seems to thick)
- Mix in Cheddar cheese and spices and stir until melted and combined
- Bake 20 min. at 350 degrees. Add bacon on top before serving if desired.
