There’s nothing like a hot hearty soup to warm you on the inside and out!

 This is rich, satisfying, comfort food in a bowl. A hearty and delicious soup, loaded with beef, barley, fresh herbs and veggies! 

Ingredients: 

  • 1 lb. ground beef
  • 1/4 cup ketchup
  • 1/2 cup barley (for GF, I use gluten-free elbow pasta, or quinoa)
  • 2 T olive oil
  • 1/2 cup chopped carrots
  • 1/2 cup chopped celery
  • 1 small onion, chopped
  • 2 T garlic, chopped
  • 1 green pepper, chopped
  • 1 (32 ounce) carton beef stock
  • s & p
  • 2 Bay leaves
  • 1 T Italian Seasoning
  • 16 oz. diced tomatoes
  • 2 T tomato paste
  • dash of Worcestershire sauce
  • few handfuls of pasta or 1 cup quinoa/rice or 1/2 cup barley

Instructions:

  • Brown ground beef, drain and add ketchup. Set aside.
  • Sauté onions, garlic, carrots, celery, green pepper in olive oil until tender.
  • Combine beef with vegetables and stock, spices, and tomatoes (sauce, diced and paste) in large stock pan and simmer at least 30-45 minutes.
  • Add the pasta, barley or quinoa about half way through cooking
  • Optional: top with freshly shredded cheddar

Sometimes I sauté the veggies and beef in the morning, combine everything in the crock pot and let it cook on low all day – it’s so nice to come home to a delicious dinner and the whole house smells amazing!
