There’s nothing like a hot hearty soup to warm you on the inside and out!
This is rich, satisfying, comfort food in a bowl. A hearty and delicious soup, loaded with beef, barley, fresh herbs and veggies!
Ingredients:
- 1 lb. ground beef
- 1/4 cup ketchup
- 1/2 cup barley (for GF, I use gluten-free elbow pasta, or quinoa)
- 2 T olive oil
- 1/2 cup chopped carrots
- 1/2 cup chopped celery
- 1 small onion, chopped
- 2 T garlic, chopped
- 1 green pepper, chopped
- 1 (32 ounce) carton beef stock
- s & p
- 2 Bay leaves
- 1 T Italian Seasoning
- 16 oz. diced tomatoes
- 2 T tomato paste
- dash of Worcestershire sauce
- few handfuls of pasta or 1 cup quinoa/rice or 1/2 cup barley
Instructions:
- Brown ground beef, drain and add ketchup. Set aside.
- Sauté onions, garlic, carrots, celery, green pepper in olive oil until tender.
- Combine beef with vegetables and stock, spices, and tomatoes (sauce, diced and paste) in large stock pan and simmer at least 30-45 minutes.
- Add the pasta, barley or quinoa about half way through cooking
- Optional: top with freshly shredded cheddar
Sometimes I sauté the veggies and beef in the morning, combine everything in the crock pot and let it cook on low all day – it’s so nice to come home to a delicious dinner and the whole house smells amazing!
