Muffins can be healthy and I promise this one is without sacrificing taste…
I pulled this one out of the archives of my recipe box (yes, an actual recipe box with real recipe cards inside)- an easy recipe to whip up during apple season. Enjoy!
Ingredients
- 2 cups whole wheat flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 3/4 cup nonfat milk
- 2 egg whites
- 1/4 cup vegetable oil
- 1/4 cup honey
- 1 cup chopped apples (I always add more)
Directions
- Preheat oven to 375 degrees F. Lightly grease one 12-cup muffin tin.
- Beat egg whites.
- In a separate bowl mix dry ingredients thoroughly.
- In a separate bowl, mix remaining ingredients. Gently fold in egg whites. Add to the dry ingredients. Stir until moistened. Batter will be slightly lumpy.
- Fill greased muffin tins two-thirds full. Bake about 20 minutes until lightly browned.
