Muffins can be healthy and I promise this one is without sacrificing taste…

I pulled this one out of the archives of my recipe box (yes, an actual recipe box with real recipe cards inside)- an easy recipe to whip up during apple season.  Enjoy!

Ingredients

  • 2 cups whole wheat flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 3/4 cup nonfat milk
  • 2 egg whites
  • 1/4 cup vegetable oil
  • 1/4 cup honey
  • 1 cup chopped apples (I always add more)

Directions

  1. Preheat oven to 375 degrees F. Lightly grease one 12-cup muffin tin.
  2. Beat egg whites.
  3. In a separate bowl mix dry ingredients thoroughly.
  4. In a separate bowl, mix remaining ingredients. Gently fold in egg whites. Add to the dry ingredients. Stir until moistened. Batter will be  slightly lumpy.
  5. Fill greased muffin tins two-thirds full. Bake about 20 minutes until lightly browned.
